Leek and Brussel – Allotment Soup

So I’ve started clearing the allotment for the plans for the new gardening year. My leeks didn’t do too well (I didn’t plant them deep enough) and the brussels I harvest a little late. Still enough of a haul to wonder what to do with it! So why not make a simple hearty soup?

Ingredients:

Leeks
Brussel Sprouts
Butter
1 Litre of vegetable stock (I use Bullion Powder)
Milk (or cream if feeling decadent)

Method:

I know I know I haven’t put weights, but simply because you don’t need them the more you have the more soup you make! just remember the liquid stock should almost cover the veg, it’s really as simple as that.

Chop the leeks and the sprouts

Fry them in plenty of salted butter till they start going golden and soft

Place into a pan and cover with the stock and simmer for around 15 mins

Blend and leave to cool, still in some milk or cream and reheat or freeze as needed!
