5 Minute Banana Cake – Egg Free

We’ve all come into the kitchen to see those brown and black spotted bananas on the side, what a waste you think… Well before throwing them in the bin think about knocking up a simple banana and cinnamon cake which takes a few minutes to mix and that’s it. Perfect for freezing and bringing out when friend pop over for tea or for pouring hot custard over for that nostalgic comfort food.


4 Over Ripe Bananas
1 1/2 Cups of self raising flour
1 1/2 Cups Caster sugar
1tsp Vanilla Essence
1tbsp Ground Cinnamon
4tbsp Melted unsalted butter
pinch of salt


Mash the bananas separately in a bowl and place aside

Mix together in a bowl all other ingredients

Add the banana and mix, it should look like a thick lumpy batter

I back mine as a traybake in a silicone square

Bake in the over at 180 for around 40-45 mins or until a knife comes out cleanly

Turn out onto a cooling rack and slice once cool (if you can keep away!)
