Roast Parsnip and Leek Soup

Soup is the ultimate tummy warmer and I have had a glut of veg given to me from the end of my friends allotment. So what better thing to create that some hearty simple soup?

You will need:

4 large leeks chopped
2 cubes of vegetable stock (or homemade if you can)
Baking tray of roasted parsnips from the oven
2 large springs of rosemary

This bit is simple! stick it all in a pan and fill with water until the vegetables are 3/4 covered and simmer for around 30-40 minutes. Take the rosemary sprigs out and discard. Blend well and add water until you are happy with the consistency. Eat and freeze as required!
