So what happens if you get back from a morning out and you are starving? You want something quick but substantial for lunch, to fill you up and keep you going. For me I just go to the garden… and add some halloumi!
You will need:
Beetroot green (or lettuce or spinach if you don’t have any)
Chilli oil (or coconut oil with some chilli flakes)
Pile up you greens on a plate, and throw on some yummy cherry tomatoes. in the mean time quickly toast 2tbsp of pumpkin seeds in a pan (no oil needed) or under a grill for a few minutes just to bring out their flavour.
Place of chilli oil in a pan and slice the halloumi, fry on both side until the slices start going golden, place the halloumi and seeds onto the greens and tuck in!
