Tricolour Balsamic Potatoes

Another week and another recipe, today a simple dinner using the new potatoes and onions dug up from the allotment. The potatoes are a combination of red, pink and white potatoes.

You will need:

  • New Potatoes
  • Herb de Provence
  • Coconut oil
  • Balsamic oil
  • Basil
  • Onions

Steam the new potatoes for around 20 minutes until soft when picked with a fork, the fry them in the coconut oil with around 2 tbsp of herb De Provence on the skin starts to brown add the onions and balsamic oil and fry for a little long till the liquid starts to go deliciously sticky sweet, serve immediately or why not have it cold the next day. Bliss.
