No for those who grow their own, we all end up with an abundance of greens. What to do with them all? well I’ve also had some very successful basil growing on my kitchen windowsill so what better than some simple goodness of steamed veg?
Many of the nutrients in vegetables can leach into the water when boiled. And the longer the vegetables are cooked, the more nutritional value is lost.
You will need:
- Fresh basil
- Pine nuts
- Coconut oil
- Any greens! – mange tout, runner beans, green beans etc.
Get the veg in the steamer! you will only need around 10 minutes to avoid losing too many nutrients.
In the mean time get all the other ingredients in the bowl (remember to melt the coconut oil!) crush the pine nuts and blend in the fresh basil (if your feeling decadent grate in some parmesan) until a crunch paste forms. Stir in the veg and enjoy!
