So for those of you with allotments we know is it rhubarb time of year. Whilst pottering at mine I was given some rhubarb from another resident there. Now normally I like to make stewed rhubarb and freeze it for indulgent crumbles later in the year, but then I am trying ( and sadly at this point, mostly failing) to be good.
Whilst in one of my more controlled moods I was online and discovered coconut sugar an alternative to refined sugar, so I thought why not? so here it is.
There are no quantities to this recipe as it all needs to be done to taste. Basically pop it all in a pan with a sprinkling of cinnamon and a little water and let it simmer. Season with sugar and cinnamon to taste. freeze and save for those now healthier ‘weak’ moments.
