Who doesn’t like a quick dinner? I hate nothing more than coming home later from work midweek and faced with a kitchen and a rumbling tummy. So here is my take on an easy speedy 15 minute supper.
You will need:
Noodles (wheat, rice, egg, whatever you like!)
2 tbsp of nut butter (I use almond)
2 tbsp olive oil
1/2 tsp chilli flakes
juice of 1/2 a lemon
handful of cashews
This is all about timing, so get the kettle boiled or the pan with water on the hob asap.
Mix together the nut butter, olive oil, chilli flakes, the lemon juice in a cup – that’s your dressing done, that simple!
boil the noodles and then toss in the dressing and mix, add in the cashews and serve on a bed of rocket.
