Who doesn’t like an easy to cook food for a snack or for dinner? this stuff tastes great with some mashed avocado and chilli flakes and literally takes 15 minutes to make. bar the parsley you will generally always have these ingredients in cupboard too! This recipe is also gluten, sugar-free and vegan.
400g can of chickpeas – I get the cheap stuff from the ethnic food aisle remember to rinse and drain them!
1 small red onion chopped
1 garlic clove chopped
handful of fresh parsley
1tsp of cumin
1/2tsp of chilli powder
2 tbsp buckwheat flour
2 tbsp coconut oil
Put all the ingredients in a food processor (this working an a nutribullet as well) minus the coconut oil.
Heat the oil in a non stick pan and fry for three minutes on each side, serve with mashed avocado or fresh made salsa – easy as that!
You can also batch cook and freeze these and defrost as a quick dinner when you get in from a busy day!
