Hey all, as you know I am turning over a new diet leaf… However I do like everyone else crave sweet treats! So one of the girls from work brough these in and I couldn’t say no to trying to make these myself – sugar-free, vegan, and oh do delicious Bounty Bars!
Ingredients:
200g desiccated coconut (look at the ethic food aisle on your local supermarket)
1 can of coconut milk (the watery bit at the bottom discarded)
2 tsps honey/date syrup/agave nectar/pure maple syrup
4 tbsps coconut oil
5 tbsp raw cacao powder
place the desiccated coconut, the coconut milk, the honey (or alternative) in a bowl and mix until it is mouldable in your hands. I use a small Tupperware tin to mould into bar shapes. Place bars in the freezer for around 30 mins.
Melt the coconut oil in a pan with the raw cacao and brush over the bars once out of the freezer, the ‘chocolate’ will harden quickly. keep in the fridge to prevent it melting or back a batch and keep in the freezer and enjoy as a snack.
