A Perfumed Delicate Delight – Rose Petal Jam

Now I love making things using things from the garden.

All the roses are slowly dropping their heads, so what better way of enjoying the last of them by making rose petal jam?

1 litre jug full of rose petals (measured before washing, it may have been a little less).IMG_1507
1kg of jam sugar
1 litre of water
juice of 2 lemons

The key with this is the more red or pink rose petals you use the more vibrant the finished article will be.

Get a one litre measuring jug and loosely fill it with rose petals to the top. (Make sure they haven’t been sprayed etc)

Place in a pan and boil with 1 litre of water for 10 mins (the rose petals will lose their colour – don’t  panic) the water goes a sludgy brown too.

IMG_1508Strain or sieve out the petals but KEEP the water and let it cool.

Add the juice of two lemons at the water will magically turn a rosy pink. Add one 1kg of sugar and a sachet of pectin (or use 1kg of jam sugar) and stir in

Once dissolved bring to the boil and boil for 15 mins or until the setting point is reached. Pop into sterilised jars and your done!!
