Moroccan Spiced Pie

So for those who are veggie and vegan its hard to think about a roast dinner and wonder what to cook for yourself. Personally I am happy with just some roast potatoes, and veg but that doesn’t suit everyone. So I have decided to share the recipe I did for our Christmas Dinner (Late I know!)

You will need:

Filo Pastry
Melted butter (or coconut oil for vegans)
1lb butternut squash
125g spinach
1tsp ground cumin
1tsp ground coriander
250g shelled pistachios
250g flaked almonds
125g cranberries
Humous

Take the butternut squash and toss in coconut oil with all the spiced and roast in the over for 30 mins on 200c

Fry all the nuts until lightly toasted and wilt in the spinach

Add the squash once roasted and the cranberries

layer the filo into the a springform round cake tin

Place in the ingredients in layers spreading the humous inbetween.

Fold in the filo and cover with a filo layer if needed.

Bake in the oven at 200c for around 30 minutes.

Remove from the springform tin and slice to serve.
